Preheat over to 375 degrees F
Combine pumpkin puree, peanut butter, and egg yolk into a bowl or stand mixer and mix until fully combined
In a separate bowl, whisk together flour and baking powder
Slowly combine flour mixture into pumpkin and peanut butter mixture
Remove dough from bowl (it will be dry!) and place it on a flour covered surface
Roll out dough until about 1/4 inch thick
Cut out "gingerbread" men shapes and place them on parchment paper covered cookie sheet
Place cookies in the oven and bake for about 20 minutes
Once cooled, decorate with your plain greek yogurt
